Armin Pernstich is the chef and owner of the Ansitz Romani restaurant in Tramin. The historic 14th-century building – a listed building – enchants with its historic flair and special atmosphere. Armin has found his professional home within these ancient walls. Here, in his home village of Tramin, he combines past and present in a delightful way.

His decision to return to South Tyrol after years in top-class cuisine in Munich was shaped by the opportunity to realize a lifelong dream with his family.

The acquisition of the Ansitz Romani was the starting point for a project close to his heart, right in the heart of his home village of Tramin. Since its opening in 2011, his experience, passion, and deep connection to the region have flowed into every detail of the establishment.

Tradition and Culinary Creativity

Armin’s cuisine thrives on the interplay of down-to-earth ingredients and subtle flavors – a liaison with which he continually surprises his guests.

“My goal is to create my own creations and refined classics of regional cuisine based on seasonal, high-quality raw ingredients from South Tyrol and Trentino”

,explains Armin passionately.

“The natural flavor of the ingredients is emphasized and enhanced through gentle cooking methods,” he continues. Indeed, regional and seasonal products form the heart of his dishes. Whether Traminer corn, rice, or catfish: much of it comes directly from the surrounding area.

Armin’s philosophy is rooted in tradition and craftsmanship, which he perfected in renowned establishments such as the Rose in Eppan, the Steinbock, and the Königshof in Munich before returning home. Today, he combines this classic foundation with creative finesse – his dishes are thoughtful, surprising, and yet deeply rooted in South Tyrolean cuisine.

The philosophy is clear right from the start of each meal: homemade bread made from a nearly 70-year-old sourdough, served with homemade lemon butter and the finest olive oil – a chef’s signature that demonstrates the craftsmanship and dedication of the kitchen. For Armin, it’s clear: less is often more. He focuses on the essentials and gives each ingredient space to unfold.

This signature has earned the restaurant national recognition – today, the Ansitz Romani is one of the region’s finest dining destinations. Gourmets from near and far, as well as many Tramin regulars, appreciate the tranquility, style, and authenticity of the establishment.

Enjoyment in the Historic Vaulted Room

Armin’s love for his homeland is palpable not only on the plate, but also in the ambience. The manor house was renovated with great sensitivity without losing its original character. Today, guests dine under centuries-old vaulted ceilings or in the picturesque courtyard amidst vines, roses, and old stone walls.

“Vaulted rooms have a very special atmosphere,” says Armin, his eyes shining brightly, recalling, “At first, it was a bit strange to cook in such ancient walls. Now, I wouldn’t want to miss this flair.”

The dining room exudes warmth and tranquility – an atmosphere that invites you to come and enjoy yourself. “I’m not just a chef here, but also a host,” emphasizes Armin. “It’s important to me to maintain direct contact with my guests. Only then can I witness the joy my creations bring.” The success of this togetherness is immediately noticeable – whether through Sabine’s warm smile or Armin’s personal presence at the table. Here, at the Taberna Romani, hospitality is truly lived.

Gewürztraminer Gourmet Evening 2025: Wine Meets Cuisine

The close connection to Tramin is also reflected in the events Armin helps organize. A highlight is coming up on Friday, May 9, 2025: the Gewürztraminer Gourmet Evening, which kicks off Gewürztraminer Wine Day. In honor of the grape variety that made Tramin world-famous, he will create an exclusive five-course menu paired with select Gewürztraminer wines and fine grappas. Eros Teboni, named “Best Sommelier of the World,” will provide expert wine pairing.

Together, they create a harmonious experience for all the senses. Guests can look forward to intense flavors, subtle contrasts, and surprising combinations – a tribute to the complexity of Gewürztraminer and Armin’s creative cuisine. On this spring evening, when the courtyard of the Ansitz Romani is bathed in warm light and the aromas of the kitchen meet the delicate notes of the wine, it becomes clear what drives Armin: a passion for simplicity, for goodness – and a love for Tramin.
