A good restaurant doesn’t need long menus, excessive decorations, or overly sophisticated dishes. What it really needs are people who cook with passion, hosts who welcome guests with warmth, and an atmosphere that makes you feel at home from the moment you step in. Arno and Doris Baldo have created exactly that. At Alte Post, in the heart of Tramin, they combine Mediterranean lightness with South Tyrolean tradition – and they do so with great success.
“I like things to be simple – but done right,” says Arno Baldo as he plates a fresh catch of the day. “My cuisine is meant to be light and easy to digest. That’s why I use a lot of olive oil and rarely any butter. The flavor of the ingredients should always take center stage – without unnecessary embellishments.”
Since 2017, Arno has been running the restaurant together with his wife Doris, and over the years, Alte Post has gained a reputation far beyond Tramin. Falstaff ranks it among South Tyrol’s best restaurants, especially praising its fish dishes and excellent wine selection. With two out of four forks in the prestigious restaurant guide, the Baldo’s kitchen is among the finest in the region. But for them, the true reward lies elsewhere.
“The biggest honor? A full restaurant and happy guests,” says Doris Baldo with a smile. She is the heart and soul of the service, knows many guests by name, and has an instinct for what they need. “Sometimes, just one look is enough to tell whether someone prefers a bold Lagrein or a crisp Pinot Blanc.”
At Alte Post, you won’t find overly elaborate plates with a dozen ingredients. Arno focuses on a clear and honest approach to cooking. His dandelion salad with speck and egg has become legendary. And when it comes to his fish dishes – for which the restaurant is particularly well known – he stays true to his philosophy: fresh, seasonal, and prepared with just the right combination of ingredients.
“I often get inspired on the spot,” Arno explains. “I go to the market, spot a beautiful eggplant or an interesting herb – and immediately, I have an idea for a new dish.” Many of his ingredients come from his own garden, from fragrant herbs to exquisite summer tomatoes. “If it’s fresh, it goes on the plate. That’s my secret.”
Alte Post is more than just a restaurant. “We want people to feel at home here, to relax, to enjoy the moment,” says Doris. “Dining is not just about eating – it’s an experience.” The atmosphere is welcoming, the dining rooms are stylish yet unpretentious. In the summer, the terrace is a favorite spot, while in the winter, the cozy interior makes for the perfect setting.
“I don’t aim to do fine dining in the traditional sense,” Arno admits. “Gourmet? What does that even mean anymore? You can even find that word on cat food labels.” He laughs and winks. “For me, good food means that it tastes great, is honest, and leaves my guests satisfied.”
The fact that their philosophy works is proven not only by the glowing reviews but also by the many loyal customers who return time and again. “The best moments are when someone stands up after a meal, shakes my hand, and says, ‘That was simply delicious.’ That’s all I need.”
Whether you come for an elaborate meal or just a glass of wine on the terrace, Alte Post is a place you’ll want to return to. But be warned: the small indoor dining area fills up quickly, so reservations are recommended.
“We simply do what we love,” says Doris. “Great food, great wine – and a little touch of dolce vita in the heart of Tramin.”
